“Jam was made by cooking down sugar and fruit. Pectin in the fruit would mix with the sugar, causing a gel to form.
Although apricots are low in pectin and the jam does not come out as thick as other jams, the flavor and texture are something to die for.
Mainly Apricot Jam is used in pies and cookies .”
